With the warmer weather, we probably eat healthier since our meals consist of a lot of salads. Who wants to turn on the oven or cook near a hot flame?
Can you say, sweatfest!
Here is a happy salad we made this week. It consisted of 1/2 head of lettuce as the base, 2 beets cubed, 1/2 cucumber sliced and quartered, 1 yellow bell pepper diced, a handful of cherry tomatoes quartered, 1 small can of corn (heated up on the stovetop) and 3 small radishes shredded to top it off. Sometimes we will also add a can of tuna for some protein.
Italian Style Dressing
If you know Italians, we don’t do dressing… instead, we just add a bit of extra virgin olive oil, a dash of balsamic vinegar, salt to taste and a dash of sugar (yes, sugar!). Mix and enjoy!
